Lacinato kale is also known as dinosaur kale or black kale. The leaves are sweeter and delicate than most curly leafed varieties. Lacinato kale is very winter hardy and can grow well into November; freezing temperatures will actually tenderize the leaves, making them sweeter and enriching the flavour.
The leaves will reach up to approximately 60 cm (2′) in height. It can be harvested at its various stages of growth without destroying the plant. It’s safe to harvest a leaf or two from each plant periodically. If you are harvesting leaves all year, the actual yield of the plant is quite large.
